  1. Put the lentils in a saucepan and cover them to twice their depth with the stock.
  2. Add the cinnamon & bay leaves, bring to the boil and simmer until the stock has reduced and the lentils are tender.
  3. Meanwhile, put the oil in a frying pan and sweat the onions, ginger and garlic until just golden, add the spices (or paste, if using) and fry for a minute more. Take off the heat.
  4. When the lentils are just tender and the stock has been absorbed, re-heat the onions and add the lentils, stirring until heated through. Garnish with the fresh coriander.

To serve: 

You can really go to town here and make this a fabulous supper with little effort: serve with basmati rice, homemade raita (see recipe box for a ‘pimped up version’!), warmed chapatis and some lime pickle…add a cold beer and suppers don’t come much better!
