Chia seeds are tiny seeds, and usually contain 20% protein, 34% oil, 25% dietary fiber, high concentrations (64%) of omega-3 fatty acids, and antioxidants. When chia seeds are soaked for at least 30 minutes, they will absorb 9-12 times their weight in water.
When gently heated in chopped soft fruit, they ‘set’ the fruit into ‘jam’ but without the need for sugar! Raspberries work best as the chia jam looks bright, vibrant and exactly like the real thing. I used strawberries because I think they go so well with scones (see recipe for healthy Porridge Oat Bread and Scones: recipe here) and I think it looked just fine!
The ‘jam’ will keep for a few days in the fridge and freezes well, too. Enjoy!
