This salad will give you a zingy, warm & spicy hit of Mexican flavours, top-notch nutritional goodness yet does away with the sometimes-stodgy wrap that usually accompany regular burritos. Black beans are a super-bean – they (amongst other things) provide special support for digestive tract health. The addition of the zingy elevates the flavour even further and gives the benefits of avocado, low-fat yogurt and lime juice (vitamins, minerals, calcium and good fats). Like most of the ‘healthy lunch’ recipes, this will do twice.
