Heat a tablespoon of oil in a frying pan and fry the onion until soft
Add the garlic, curry paste, chilli & ginger
Combine the mashed sweet potato, cooked quinoa & onion mixture with the egg, flour & coriander. Season with salt & black pepper
Form the mixture into 8 patties & place on a sheet lined with baking paper. Place in fridge for half an hour
Preheat the oven to 180 degrees
Heat some oil in a frying pan & fry off the patties for 2-3 minutes on each side, until golden brown. Put them in the oven to keep warm
NOTE: if you fry the patties off, then let cool & refrigerate them, they will happily re-heat in a warm oven.
