Blitz the seeds in a food processor bowl. It will look like they are just whizzing round whole for the first 30 seconds - be patient: pumpkin seeds are hard!
When the seeds are coarsely chopped, add the fresh ginger and dates and pulse for about 60 seconds - the mix should be sticky but not pureed - the pieces of seeds should be still visible
Add the cranberries, spices and orange zest and blitz again for another 20-30 seconds
Dampen your hands and roll the mix into 20 balls - pack them quite tightly. I used a Rice Cube maker which is like a simple cube thing for making square sushi - they are less than ten pounds if you see yourself making loads of these - they press the bites into really firm little cubes.
Lightly coat the bites with dessciated coconut. I also used cacao nibs for aome and Omega 3 Chocolate Sprinkle (really healthy and recipe is in the archive).
Chill for an hour before eating. Store in an airtight container in the fridge for up to 3 days, or make a bigger batch and freeze them (you should never reach for the biscuit tin in work again!)
