I stumbled across the original version of this recipe on My New Roots blog. It looked interesting, so I gave it a go. Hmmm…although I love nuts and coconut oil, I found the flavours and texture just a little too much, so the fiddling around began! I eventually ended up with this nut-free loaf, more ‘bread-like’ look and texture. Think a wheat free version of the most dense, seed-y, moist wheaten bread you can imagine. While definitely not true ‘bread’, toasted with jam, cheese, humous or sliced and baked into crackers, I think you’ll find this will more than fit the bill on those days you want gluten and wheat-free with maximum taste. That’s, of course, without going into the sheer nutritional content of this recipe: let’s just say it’s really, really very good for you! The health benefits of psyllium, in particular, are mind-boggling – have a read below and prepare to be astonished!
